Coconut Pecan Frosting (!)
This is so good- its not overly sweet and has such a great texture. Not sticky but has just that hint of caramel. Seriously can eat this with a spoon!
1 (12 ounce) can evaporated milk
1 1/2 cups sugar
3/4 c butter
4-5 egg yolks slightly beaten
1 1/2 tsp vanilla extract
1 (7 ounce) package shredded coconut
1 1/2 cups chopped pecans
Place everything except coconut and pecans in a sauce pan and cook over medium heat (stirring constantly) until golden brown and thickened. At the coconut and pecans and cool until room temp.
