Make Fondant Ruffle “flowers”

Posted on Oct 2, 2013 by in Tricks of the Trade | 0 comments

When I was asked to make this cake I couldnt wait to get to the ruffles. They are simple to make, and attach directly onto the frosted cake. The picture below shows the steps to making the ruffles, the ruffles wanted to flop on each other when I first put them on the cake (I wanted a full fluffy look) so I rolled the fondant in gumpaste to help speed the drying process and I used a very small rounded tool inside each ruffle opening it up a little as it was drying on the cake. For more on how to make this complete cake see “Silver and Gold” under Wedding Cakes.
