Chocolate Sour Cream Frosting
You need: 12 Ounces semi sweet chocolate- (I use chocolate chips but if you use a bar chop it into small pieces) 3 sticks unsalted butter, room temperature. 3 cups powdered sugar 3/4 cup sour cream dash of salt I don't have a double broiler so I do this, making sure my bowl is about the simmering water NOT in the water stirring the chocolate often until smooth. DS Cake
When I make figures for my cakes and cupcakes I don’t like to use solid fondant or gum paste because they become SO heavy. I like to make a rice crispy base that will be hard enough to support but not as dense. And for some reason kids think they are the most fun to eat! I made my rice crispy treat with 6 cups marshmallows, and 6 cups rice crispy cereal, and just a couple teaspoons of butter in the pan or bowl to help with the stickiness. Mermaid Wave Cake
This wavy cake was a huge hit! I made the waves by making a simple template out of wax paper, using 3 colors of fondant to cut them out and then overlapping them just a bit as I placed them on the cake. To make the mermaids I started with bases of rice crispy that I left to dry overnight and then added fondant for the decorating.
