I love it when brides want un-traditional cakes! This was really fun to make. Because all my layers would be showing I baked each one with a little extra batter so I would have plenty of height to work with. I needed to be able to level them PERFECTLY (and it made for a lot of yummy scraps!) My Cake Stacking 101 post is HERE but in addition I made sure I my frosting dam went right to the edges evenly (use a frosting bag or zip lock with a corner cut off.) Once I had stacked it I used a small spatula to fill it in where it needed it. To place the berries I used a frosting bag and piped just a tiny bit of frosting on each one so they would stay just where I wanted. (I cut some of the strawberries in half so they wouldn’t stick too far out.) It would look really pretty to add champagne grapes too if its the right season to find them.
