Brown Sugar Buttercream

I made this after trying a meringue version that was WONDERFUL but a little sweet. Swiss Meringue is one of my favorite frostings so I thought I would just try it with brown sugar. And yes…. HEAVEN! It was so good. But then again frosting is why I started making cakes so I get excited when I find a new favorite!

6 large egg whites
1 2/3 cups packed dark-brown sugar
1/4 teaspoon salt
4 sticks (2 cups) unsalted butter, room temperature

Mix the egg whites and sugar in a mixing bowl and place over a pan with about an inch of boiling water, stir constantly until the sugar is melted but the not hot- about 3-4 minutes. Beat on high speed until stiff and glossy, then start adding the butter a few table spoons at a time then beat until it becomes the glossy gorgeous frosting you will LOVE!
