Christmas Tree Cupcakes

December 29, 2012

These are a double treat, this is a cupcake (any size) topped with a cake ball and then covered in frosting. Without the cake ball to support it the frosting would not hold its shape. (I make the cake ball with crumbled cake and frosting.)
I first make the cake ball in a triangle shape that is large enough that it blends down into the cupcake (almost to the sides) and then put that combination in the fridge to set. Once the cupcake and cake ball are firm I take a bag of frosting with a swirl tip (a large Wilton 1M ) and starting at the bottom, make little frosting peaks all the way around and up the cupcake. A little fondant star makes it perfect. Merry Christmas!!
