Ok another “NOT a cake post”- I am taking a couple months off while the kids are out of school and we are having fun baking all kinds of other things! My 14 year old made these, (I decided this summer he needs to learn to use the kitchen and not just rely on his sister) and we all loved them, we used fresh blueberries we picked but you can use frozen as well. They weren’t heavy like a dense muffin, or as light as cake, just perfectly in between!
1 cup flour
1 tsp baking powder
pinch of salt
1 cup sugar
1/4 cup butter
2 eggs
1/4 cup milk (or buttermilk if you have it!)
1 cup fresh or frozen blueberries plus a few extra
Cream butter and sugar, add eggs and beat until fluffy. Use a wooden spoon to alternate the dry ingredients (premixed separately) and the milk until combined. Stir in blueberries. I added a few more berries on top after I scooped them into the liners. Top with a little sugar when they are still warm. Enjoy! (We did!)
