PB Oatmeal Double Chip Cookies

June 30, 2014

This are so good- the dough AND the cookies. (I used our own healthy chicken eggs so I was not worried about the raw egg, not that I ever have anyway!) The cookies are just the perfect texture- just a little crispy and still chewy in the middle. LOVE LOVE LOVE.

1 c butter
1 c creamy peanut butter
1 1/2 c brown sugar, packed
1 c granulated sugar
2 eggs
1 TBL vanilla extract
2 1/4 c all-purpose flour
2 c old fashioned whole oats
1 tsp baking soda
2 c chocolate chips (or 1 12 oz bag)
2 c peanut butter chips (or 1 12 oz bag)

DIRECTIONS:
Cream the first 4 ingredients together in your mixer and don’t taste when its light and fluffy because you may not stop eating it…. add the eggs and vanilla- blend again. I know its recommended to blend your dry ingredients, so do that if you will (but I never do I just add them in order, careful to not over blend.) Bake at 350 for 10-12 minutes, taking them out just before you think they look done. ENJOY!!!
