Pomegranate Salsa

This was so good! My friend Genni hosted Bunko at her house and had a whole counter full of delicious food- pulled pork, beans, rice, tortillas and a bowl of this…..heaven! I thought about it for 3 days after and had to make it. I am not ashamed to say that over the next day I ate the whole bowl myself. It is so sweet and spicy and delicious just on its own! It is perfect over a salad, with rice, on a taco…the list goes on and on.

To make this Salsa combine one jar of this: (I put the link in case you don’t happen to have a Trader Joe’s in your neighborhood!)

Trader Joe’s Corn & Chile Tomatoless Salsa
Add 1 can of black beans and the seeds from 1-2 pomegranates depending on how sweet you like it. I used 2. (When I open my pomegranates I put a bowl of water in the sink and submerge the whole fruit as I pop the seeds out. Less mess!)
