Cake Pop Prep

Cake Pops are not forgiving, they will plop off the stick, crack and leak but there are a few things to do make sure you are prepped for great pops.
~When mixing your cake and frosting, make sure your cake balls are JUST wet enough to stick together, they shouldn’t crumble when you roll them but should stick together without feeling wet. After the balls are rolled place them in an airtight container that is lined with a paper towel and refrigerate them over night. (The paper towel will absorb any excess oil.)
~Here is the rule that must not be broken, NEVER dip a cake ball that is not completely COLD. I keep my cake balls in the refridgerator only taking out 2 at a time to dip, if the ball is out for more than 2-3 minutes, or if it dents when picked up, dont dip! Put it back!
~Always dip your cake pop stick in the melted chocolate before inserting it in the cake ball.
