Pumpkin Spice Cupcakes

This is one of my most requested Holiday Flavors- I love it so much because it is filled with the spices that make me feel like Fall and the holidays are really here! My secret to a moist cake is the added banana (and I love the added kick of a little spice cake although the recipe doesn’t require it- delicious either way!)

3/4 cup oil
1 stick (1/4 cup) softened butter
1 cup sugar
1 cup brown sugar
mix until creamy then add-
3 eggs
1 mashed banana
1 1/2 cup pumpkin
mix until completely blended.
In another bowl combine:
3 cups flour, 1 tsp salt, 1 tsp baking soda, 2 tsp baking powder
2 tsp cinnamon, 1/4 tsp cloves, 1/4 tsp nutmeg, 1/2 tsp pumpkin pie spice (or more cloves)
1 cup spice cake mix- stir dry ingredients together then add gradually to the wet mix adding
1/2 cup sour cream.

Its a thickish batter and its soooooo good!

Fill cupcake liners 3/4 full and bake at 350 11-13 minutes. When the cupcakes are cool I love filling them with Buttermilk Caramel Glaze.
