Of course there are more than 3 reasons- but everyone who loves cakes should master this easy technique. (My photo tutorial is HERE!) 1- They are FAST- instead of going through the process of smooth frosting or fondant covering this technique is such a LIFE saver. Weeks when I am booked up I can still add in a few rose cakes because they are so easy. 2- They can be Elegant like this 60th anniversary cake, or fun like this baby shower cake! 3- EVERYONE LOVES THEM! Seriously. They make ... VIEW POST
Quick Stacking
I decided my first Cake Stacking post needed a follow up. :) When I am getting ready to stack I level each layer (look at that yumminess I'm cutting off the top) and then place the bottom layer on a cake board, even if its the bottom tier. Using a cake board helps your cake set up straighter and then it will give you an edge to work with as you are frosting. I like my tiers to be set really well before I start stacking so build each one on a piece of wax paper that is set on top of a cake ... VIEW POST
Naked Cakes
These are really popular right now and these are a couple of my favorites from this past year. The bare minimum look can add a rustic feel or even a different kind of elegance, depending on the surroundings. I love the tree trunk stand but the brass and silver is beautiful too! Different looks for different brides. The trick to the naked cake is STACKING STACKING STACKING. You cant hide uneven edges with frosting. I've posted in the past about stacking (HERE) but I just added a few ... VIEW POST
Make-Up cake! (or cosmetics cake or whatever you want to call it!)
Yes seriously. This cake was so fun- I told Natalie that when she is 14 maybe she can start wearing make-up and I'll make her this cake (even though this one was for an 8 year old!) For the back of the make-up case I cut out cardboard, glued Popsicle sticks on the back and then wrapped it before covering it with fondant. Before pressing it into the cake I used different sticks to make the holes so I didnt have to press hard on the fondnat. In the top photo you can see how I did the ... VIEW POST
Red Rose
When making flowers that will sit on top of the cake I don't use the toothpick trick like I did with THESE gumpaste flowers that needed to support themselves. Instead I use cupcake pans (or empty egg containers or anything!) and Saran Wrap. Lots and lots of Saran Wrap. I like it better than tinfoil because its softer on the petals and really easy to bunch up into little supportive balls or rolls. I made 3 sizes of petals ahead of time (3 days ahead if I can) and I use circle cutters! ... VIEW POST
Perfect Piping (well, almost!)
Of course the piping isn't perfect but I love how it turned out. HERE are some cake stacking tips if you need them, then my favorite Royal Icing recipe is what you need to prep next. I added just a little yellow food coloring to it so it would have a nice base color for the gold dust I applied with a little paint brush at the end. (To mix a true gold royal icing takes a TON of dust so I prefer to brush it on later.) I spaced my pattern around the cake so I would keep the triangles the ... VIEW POST
